UL300 Automatic Fire Protection Systems

&

Many, if not most, insurance companies are now requiring the installation of kitchen hood and duct fire protection systems that meet the Underwriters Laboratories Standard 300, commonly referred to as UL300. 

The UL300 was adopted in 1994 as the result of changing technology in kitchen equipment, most notably deep fat fryers. Deep fat fryers were (are) being designed to be high-efficiency and better insulated to handle the advancements in oils being used to cook food. The new cooking oils have been developed to burn at higher temperatures. 

The UL300 systems typically use a wet chemical instead of a dry chemical. Comparatively, a dry chemical system initially knocks down a fire but because of the higher cooking temperatures and better-insulated equipment typically does not extinguish the fire, resulting in an eventual flare up fire. The wet chemical system is designed to cool the fire below its’ ignition temperature, thus minimizing any flare up fires.

 There are two options when considering an update to your fire protection system. First option is to install a new UL300 approved system. Depending on the construction & design of your current hood and duct system, and the cooking equipment to be protected, this option could cost $3000 and higher. The second option is to have your fire protection service contractor advise you if it’s possible to adjust or upgrade your current system to be UL300 compliant. Again the cost will vary depending on design and current equipment.
